Cap'n Crunch French Toast



Recently I was watching Food Network's "Diner's, Drive-In's and Dive's", you know, the show with the guy with the horribly highlighted hair and Oakley's on the back of his head? That's the one. Well the show covered this adorable restaurant in Baltimore called Blue Moon Cafe. Immediately captured was the cap'n crunch french toast. Be still my beating heart! I knew I had to recreate this concoction immediately!

  • 3/4 cup milk
  • 3 eggs
  • 2 tbs sugar
  • 1 tsp vanilla extract
  • 3 cups Cap'n Crunch cereal
  • 8-10 slices of bread
  • Butter for frying
  • Whipped cream (optional)
  • Fresh fruit (optional)

  1. In a high sided container, pour in cereal and crush with the bottom of glass until lightly crumbled. It should be a good mix of crumbs and chunks of cereal.
  2. In another bowl mix milk, eggs, sugar, and vanilla.
  3. Dip a slice of bread into milk mixture until well soaked but not soggy.
  4. Then dip bread into crumb mixture and make sure well coated on both sides.
  5. Place on bread into heated frying pan with about 2 tbs melted butter.
  6. Keep on medium heated until toasted brown and cereal has begun to caramelize. Flip and brown the other side.
  7. Repeat this step with all the bread, adding more butter to the frying pan as needed.
  8. Blue Moon serves their french toast with whipped cream and seasonal fruit on top. I find that a great idea because the cereal already makes the bread very sweet and syrup isn't needed.
NOTE: I used blueberries as seen in the show, also if you buy a pint of heavy cream, you can use the rest not used in the mix to make the whipped cream (cream, vanilla, powdered sugar). I'm sure this would be AMAZING with strawberries though. If you aren't into cap'n crunch just forget about it and this will still be amazing!
